Matcha is a special form of powdered green tea with a deep green color.
It is a long-standing tradition of Japan, where it is used during the Japanese tea ceremony.
Japanese monks first produced it over a thousand years ago as an aid during meditation practice, to keep their mind awake and help their body relax.
It is derived from green tea leaves from the very top of the plant.Three weeks before harvest, the leaves are shaded and this change in sunlight raises the levels of rich in nutrients chlorophyll.
Once harvested, the leaves are steamed to stop the fermentation process that would have reduced these elements. After drying, they are ground with stones and provide a bright green powder.
Uses
You can add matcha to hot or cold water and drink it as a tea. Alternatively you can mix it with milk and sugar.
It is also being used as flavouring in many chocolates, candy, desserts, cookies, pudding, mousse, green tea ice cream and smoothies.
